Here is a totally yummy recipe for devilled eggs I created, using red and blue colored “real food” to decorate the top of the eggs, giving them a patriotic look that makes these perfect to serve as an appetizer for a 4th of July All-American barbecue, party, or family gathering. There’s not a lot of blue food products out there that match with the flavor of hard-boiled eggs, but I thought of using Blue Corn Chips and feel this works really well. Since the Chips seem to lose their crispness after being on the eggs, these are definitely best when served to guests immediately. Kick your classic eggs up a notch with this flavorful combination of flavors.

Ingredients
  • 6 hard-boiled Eggs
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Prepared Yellow Mustard
  • ½ teaspoon Sugar
  • 1¼ teaspoons Apple Cider Vinegar
  • 1 teaspoon Sweet Relish
  • ¼ teaspoon Kosher Salt
  • ¼ teaspoon Cayenne Pepper
  • 2 heaping tablespoons Diced Pimientos (from jar), drained
  • 2 heaping tablespoons Blue Corn Tortilla Chips, crumbled
  • Paprika, for sprinkling on top of Eggs
Instructions
  1. Peel shells off hard-boiled eggs. Carefully cut each egg lengthwise down the middle.
  2. Scoop out yolks for all egg halves and place yolks into small mixing bowl. Put egg white halves in single layer on flat plate, deviled egg dish (or whatever you are using to serve the eggs on) or in storage container (for serving later).
  3. Add the Mayonnaise, Mustard, Sugar, Vinegar, Relish, Salt, and Pepper into the bowl with the egg yolks and, using a fork, mash and mix together well.
  4. Place spoonfuls of yolk mixture into egg halves, dividing evenly amongst the halves. (NOTE: If you are serving later, do not complete the next steps until right before you are ready to serve the eggs.)
  5. Top half of each egg yolk topping with Diced Pimiento, dividing evenly.
  6. Top the other half of each egg yolk topping with crushed Blue Corn Tortilla Chips.
  7. Sprinkle the top of all your eggs decoratively with Paprika.
  8. Serve immediately. Again Note: If you must prepare in advance, do not add the toppings of chips, pimiento, and sprinkle of paprika until just before serving (keep covered until serving).
